Finding the time to cook sometimes seems impossible, at least for me it does! Between the leg tugs, laundry, dishes and making sure you are participating in play time, dinner for me seems to be the last thing on my mind…until I am starving. This EASY pot pie recipe is my go to. It is so simple and comforting and is one of my family favorites!
Ingredients
- 3 to 4 chicken breasts cooked (I put mine in the crock pot and let them cook for 3-4 hours on high or 6-8 hours on low. I can put the chicken in and not worry about it burning and get the rest of my to do list done!)
- 1 can of cream of chicken soup
- 2 pie crusts
- bag of frozen veggies (I buy the steamable bag but you are free to buy a regular bag or canned veggies)
Directions
- preheat your oven to 350 degrees
- set out pie crusts at least 15 min before starting
- shred, dice or cut your cooked chicken
- In a medium mixing bowl combine chicken, vegetables (you can leave them frozen or steam them) and soup. Mix ingredients together.
- Pour the mixture into one pie crust
- place the remaining pie crust over the top of the pie. You can make your top pie crust as fancy as you want. With two children under the age of one, I am lucky to get the top on!
- Bake for 30 minutes until the crust is a golden brown. Let sit for 10-15 minutes to cool and thicken!
*****There are different variations you can do to do this recipe. You can use canned chicken, biscuits instead of pie crust or add ingredients like potatoes!
*****If you have a little one, you can set out some of the veggies for a snack or side for dinner!
****I stopped using a crock pot for 5 years because it was too heavy, too big, and too hard to clean! I was in Kroger one day and discovered these crock pot liners! Game changer! I cook almost all of my chicken for my chicken recipes in it now! I just put the chicken in, let it cook for 3-4 hours while I am working, cleaning or playing with the kids and then its ready to go when I am ready to start dinner!
